"Restaurant opening checklist brings concept, budget, kitchen, equipment, menu, supply, staffing and training work together in one schedule 90 days before opening. Chef Ahmet Özdemir explains the right order for managing the final 90 days, trial service, soft opening and sales, cost, waste, service-time and team-performance controls required during the first week."
A successful restaurant opening begins at least 90 days before the doors open. Professional restaurant setup aligns the project, kitchen, menu, team, supply chain and training within one controlled schedule.
The main opening stages should be managed in the following order.
The concept, target guest, capacity and investment budget are finalized. The architectural plan, kitchen planning, infrastructure requirements and equipment list are checked together. Local specialists begin licensing and official permit procedures.
The main menu structure is established and the kitchen’s products, production capacity and required equipment become clear.
Equipment orders, supplier negotiations, recipe trials and cost calculations are completed. The organization chart, job descriptions, recruitment plan, POS, stock and purchasing systems are prepared.
Items that cannot be produced efficiently or create unnecessary stock should be removed through professional menu planning.
Kitchen and service teams begin work. Recipes, portions, presentation standards, service language, hygiene procedures and opening-closing checklists are applied through staff training.
The full team performs production and service rehearsals. Preparation time, order flow, table turnover, plate delivery and payment processes are measured. A controlled soft opening tests the system before full demand.
Sales, costs, waste, guest feedback, service time and staff performance are monitored daily. First-week data is used to correct menu, shift and purchasing decisions.
